This Simple and Easy Gluten-free Tabbouleh is the most delicious side salad everrr.
Lemons, herbs, and olive oil are one of my favorite flavors so naturally, I love Tabbouleh!! It is one of my favorite side dishes/salads and adds the perfect amount of freshness to any dish. The refreshing salad originates from Lebanese and Syrian cuisines and is widely eaten across the Middle East and the Mediterranean.
It’s super easy to make so here’s a recipe so you can try it out ☀️
5 ways to eat Tabbouleh
- As a refreshing side dish/ a part of a mezze platter
- As a base for a more filling salad (add cooked vegetables and pan-fried tofu or other protein)
- With pita bread
- With grilled fish
- With grilled vegetables such as eggplant, mushrooms, carrots, peppers, tomatoes
GLUTEN-FREE TABBOULEH RECIPE
Cooking time 15 min
Serves 3 (as a side dish)
Ingredients
- 1 bunch of fresh parsley
- ½ bunch of fresh mint
- 1/2 cucumber
- 2 handfuls of cherry tomatoes or 2-3 tomatoes
- 1,5 dl or 3/4 cup quinoa
- 2 tablespoons lemon juice
- 3 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- 1 (big) garlic clove, minced
- + Pomegranate seeds for garnish
Instructions
- Rinse your quinoa thoroughly and cook according to package instructions. Season the water with salt or vegetable stock. Let your quinoa cool down.
- Thinly dice your cucumber and tomatoes and finely chop your herbs (you can use part of the parsley stems too!). Mince your garlic and add everything together in a bowl and mix. Add lemon juice, a good drizzle of olive oil, and minced garlic. Season with salt and freshly ground black pepper.
