Blood Orange Salad with Tahini Spread
This Blood Orange Salad with Tahini Spread is an amazing combination of sweet, tangy, and savory flavors. It’s literally the end result of combining all of my current food obsessions into one beautiful plate 🫶🏽
Blood oranges are in season from January to March, and during this period I could probably live off of them. They. are. so GOOD. And beautiful!! This seasonal fruit salad has some of my faaaavorite winter fruits; blood oranges, navel oranges, and pomegranates. I love the combination of savory and sweet, so I added a light spread of Tahini & Yogurt spread (ahh- something I could eat straight from the jar), a drizzle of good quality extra virgin olive oil, and a pinch of flaky sea salt.
I enjoyed this plate as a snack, but I think this also makes a great addition to a dinner table when you want something refreshing! For example, I can imagine eating this with Tabbouleh, grilled tofu, and some roasted veggies… yaam…
BLOOD ORANGE SALAD WITH TAHINI SPREAD RECIPE
Cooking time 10 min
Makes 1-2
Ingredients
- 2 blood oranges
- 1 navel orange
- Pomegranate seeds, a handful
- Pistachios, a handful
- Extra virgin olive oil
- Sea salt flakes (Maldon)
- Mint leaves, thinly chopped
- Spring onion, a handful
- Extra virgin olive oil
Instructions
- Prepare your tahini spread (recipe below) and put it aside in the fridge while you cut your fruits. De-seed the pomegranate and segment oranges (aka cut the peels + white part out of them). Chop your pistachios, spring onion, and mint leaves.
- Assemble the plate by adding the tahini spread at the bottom of the plate, then add your citrus fruits and sprinkle some pomegranates and pistachios on top of them. Finish with finely chopped mint, a drizzle of olive oil, and a pinch of sea salt flakes.
Tahini Spread
- 1 big tablespoon tahini
- 3 tablespoons (thick) dairy-free yogurt
- Pinch of salt
Instructions
- Mix tahini and yogurt together and season with a pinch of salt. I didn’t really measure anything, so add according to your taste/preferred texture 😊
