How to Make Vegan Raw Chocolate at Home
I LOVE chocolate. Especially rich, dark chocolate.
Making your own chocolate is super easy – and so much healthier! You get to alter the sweetness and enjoy it in its purest form. Plus the most exciting part is that you get to experiment with different flavor combinations!
This recipe is refined sugar-free, vegan, and delicious! It’s also quick & easy to make, and you only need 4 ingredients. Let me show you how to make vegan raw chocolate at home!
Raw chocolate health benefits
- It’s high in Antioxidants
- Filled with Flavanoids
- Anti-inflammatory
- High in Magnesium & Iron
- Boosts your mood ☀️
- Improves blood flow to the brain
The base of your raw chocolate
The base of the chocolate is just 4 ingredients: cacao butter, raw cacao powder, liquid sweetener, and a pinch of salt. You can use whatever liquid sweetener you like, and some examples are honey, agave, coconut nectar, and maple syrup.
I love using coconut nectar cause it has a rich, almost “nutty”, maple syrup kind of flavor. It also has a low glycemic level. Honey is also one of my go-to sweeteners due to its sweet and neutral flavor.
Variations
The beauty of this recipe is that you can try so many different flavor combinations.
Some of my favorite combinations are peanut butter-filled chocolates, mint chocolate, orange chocolate, and chocolate topped with freeze-dried strawberries.
EASY VEGAN RAW CHOCOLATE RECIPE
Cooking time 10 min + 1 hour to set
Serves 12 small chocolate pieces
Ingredients
- 50 gr or 1,8 oz cacao butter
- 25 gr or 5,5 tablespoons* of raw cacao powder
- 1,5-2 tablespoons of liquid sweetener like maple syrup, agave, or coconut nectar
- Pinch of salt
*Measured with measuring spoon
Optional, add 1 teaspoon of vanilla extract to your chocolate mixture if desired. You can make mint chocolate by adding 1 teaspoon of peppermint extract or 1/4 teaspoon of food-grade peppermint oil.
Instructions
- Chop your cacao butter, and melt it by placing a bowl over hot water. Be sure that you don’t let any water into your cacao butter! You can also melt it in the microwave, but be careful since it melts super quickly. Start by heating it up in 20-second intervals.
- Mix the raw cacao powder into your cacao butter. Add your preferred sweetener, and a pinch of salt. If you’re using vanilla or peppermint extract, add it to the mixture as well.
- Pour the chocolate into the silicone molds. If you’re making chocolate bark, pour the mixture into a baking sheet. Add toppings if desired.
- Place the chocolate into your fridge and let it completely set. This will take around 1-2 hours. After the chocolates have set, pop them out of the mold and ENJOY 🍫
Topping & flavoring ideas for your raw chocolate
Make your raw chocolate taste even more delicious by topping it with your favorite toppings! Here are some suggestions of what you can use:
- Freeze-dried strawberries or raspberries
- Chopped almonds, hazelnuts, or pistachios
- Nut butter, like almond or peanut butter
- Orange peel
- Dried fruits
- Vanilla extract
- Shredded coconut
- Cacao nibs
- Puffed quinoa
- Sea salt flakes
Tips and notes
- Store your raw chocolate in the fridge and enjoy it within 1-2 weeks. If you don’t temper your chocolate, they will be quite melty, so a cool place to store them is the best.
- Make sure to use unsweetened, raw cacao powder to get the best flavor and health benefits!
- On top of the ingredients, you’ll need a candy silicone mold where you can pour your chocolate mixture. I bought mine from my local baking store, but you can find lots of different ones on Amazon, like this one.
