Mediterranean Salmon Salad Bowl
This is one of my favorite quick weekday lunch salads! This Mediterranean salmon salad bowl takes under 15 minutes to make and it’s THE perfect summer lunch ☀️ I love, love, loooove salmon, and together with the creamy avocado, and other veggies, it makes a perfect light but filling, and nourishing bowl of goodness.
What you need to make a Mediterranean salmon salad bowl
Salmon – A great source of protein, vitamins, and healthy fats. Look for sustainably caught or farmed salmon.
Your favorite greens – Kale, arugula, spinach, mixed greens… whatever works here! These leafy greens contain loads of vitamins and minerals & support good gut health and help with bloating.
Cherry tomatoes – Sweet cherry tomatoes are soo yummy and they add a nice umami flavor.
Cucumber – I’m going to let these guys present the benefits of cucumber
Sweet pepper – Like the cucumber, this adds a nice texture and crunch to the salad. You can use a bell pepper of any color that’s your favorite!
Avocado – Another great source of healthy fats. Plus who doesn’t love a good avocado moment 💁🏽♀️ Avocados are full of nutrients such as fiber potassium, magnesium, and vitamins K, E, C, and B. Avocado is one of my favorite ingredients in salads; it adds a nice creaminess and goes with almost any salad!
Red onion – Crispy and slightly sweet red onions are delicious in salads and they add a nice pop of color to your plate 🌈
Olives – Green pitted olives and kalamata olives are my go-to’s. They add a nice savory taste to the salad, and they are filled with antioxidants.
Strawberries – Whenever strawberries are in season, I’ll be sure to eat them for breakfast, lunch, dinner, and dessert…I love strawberries! Using fruits or berries in salads is a game changer, and if you haven’t tried it before, please do!! If strawberries aren’t in season or accessible, you can swap them for nectarines or peaches.
Dressing – A good salad turns into a great salad when you add a good dressing! I used my go-to quick & easy Lemon & Herb vinaigrette which I’ll leave the recipe to 🙂
Mediterranean salmon salad bowl recipe
Cooking time 15 minutes
Serves 1 people
Ingredients
- Salmon filet or medallion (150 gr or 5.3 oz)
- 2 handfuls of leafy greens
- 5-10 olives
- 5-10 cherry tomatoes
- 1/4 cucumber
- 1/4 sweet pepper
- 1/2 avocado
- Handful of strawberries
- 1/4 red onion
- Dried herbs; oregano, thyme, chives
- Salt and black pepper to taste
Instructions
- Add olive oil to your pan and fry your salmon until it’s nice and golden. Season with dried herbs, salt, and pepper.
- Assemble your salad base. If you’re using kale. drizzle some olive oil and lemon juice onto it and massage it with your hands. This is how you make it taste so much better & it helps with the toughness. Season your greens with freshly ground black pepper and sea salt. Add cut veggies and finish everything with lemon&herb vinaigrette. Serve with lemon wedges and Enjoy 💚
Lemon & Herb vinaigrette
Ingredients
- Lemon juice (1/2 lemon)
- 1 dl or 1/2 cup extra virgin olive oil
- 1 clove of garlic
- Dried herbs; chives, oregano, thyme, parsley
- Salt & black pepper
Instructions
- Mince your garlic and mix all of the ingredients together in a glass jar. Give it a shake and drizzle over the salad. This recipe makes a bit more than needed, so store the remaining vinaigrette in the fridge. Use within 1 week.
