Tofu Tacos with Herb Crema
Woop woop, today we’re cooking tacoooooos!! Tofu Tacos with Herb Crema to be exact.
Tacos are one of my FAVORITE things to eat. Anything you can eat with your hands just tastes the best right??
You can top your tacos with anything you like, but here’s a plant-based version that’s full of fresh flavors and bright colors 🌱 And they are also super simple to make! If you want to make your own tortillas (which takes a bit more time) this would be the perfect dinner/lunch idea for a lazy Saturday evening ✨
TOFU TACOS WITH HERB CREMA RECIPE
Cooking time 30 min
Makes about 12 tacos
Ingredients
- Any leafy vegetable you prefer! I used purple mangold leaves since they look soo pretty
- 2-3 carrots, grated
- 1 fresh mango
- 2 limes
- 1 jalapeño
- Tortillas
- Herb crema (recipe below)
- Battered tofu (recipe below)
Instructions
- Make your battered tofu. Make the mango salsa by dicing your mango into small cubes. Add finely chopped jalapeno, salt, and a squeeze of lime juice.
- Assemble the taco by adding your desired leafy veggie and grated carrot. Add tofu chunks, and mango salsa, and finish everything with a drizzle of herb crema + squeeze of lime juice.
Battered Tofu
- 2 dl Oat flour
- 2 dl Oat milk (more or less)
- 1/2 teaspoon chili powder (chipotle)
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- Make the batter by combining wet & dry ingredients. Add enough milk to make a fairly thick batter. Tear your tofu into chunks and add it to the batter. Mix well and bake in the oven (225 celsius or 435 Fahrenheit) for 20 minutes or until nice n’ crispy. You can also pan-fry them (with a generous amount of oil) or use an air fryer!
Herb Crema🌱
- 2,5 dl or 1 cup plant-based yogurt or sour cream
- 1/2 bunch parsley
- 1/2 bunch coriander
- 1-2 garlic cloves
- Juice of 1/2 lime
- Salt and black pepper to taste
- A squeeze of agave syrup
- 1/2 green jalapeño if you want a little bit of ✨oomph✨
- Finely chop your herbs and add ingredients to a food processor/blender. Blend until everything is well combined.
