Vegan Greek Salad with Tofu Feta
This plant-based twist on the classic Mediterranean dish is the perfect light and fresh summer lunch, and one of my go-to meals on a hot day ☀️ The colorful combination of crispy veggies, salty olives, and creamy vegan feta paired with a simple, but delicious vinegarette will always remember me of my family trips to Greece, and I love making it whenever I want to cherish those memories 🇬🇷
I’m also sharing my favorite recipe for vegan tofu feta, which is perfect in this salad!
How to make Vegan Tofu Feta
You’ll need 1 block of extra firm tofu, some pantry stables, aand a dash of patience. You need to marinate your tofu “feta” for at least 12 hours before enjoying it but I swear it’s worth it! 😌
Ingredients
- 1 block of extra firm tofu
- 2 tablespoons extra virgin olive oil
- 2 tablespoons of soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 2 tablespoons apple cider vinegar
- A squeeze of a lemon
- 1/2 teaspoon freshly ground black pepper
Instructions
- Press your tofu with a tofu presser, or by wrapping it in a clean kitchen towel. Then place a heavy object on top of it, and wait for the excess water to come out. This will take about 5-10 minutes. Cut the tofu into small, bite-sized cubes.
- Place your tofu in a glass jar or reusable ziplock bag. Measure your ingredients together and pour the marinade over the tofu. Place in the fridge and let it marinate for at least 12 hours. (for even better results, leave it in the fridge for 24 hours)
Easy Vegan Greek Salad Dressing
This simple and easy dressing pairs perfectly with the Greek salad, and tastes great in many different salads as well!

Ingredients
- 1 dl or 0,6 cup extra virgin olive oil
- 4 tablespoons of red wine vinegar
- 1 (big) garlic clove
- 1-2 teaspoons of oregano
- Salt and freshly ground black pepper to taste
Instructions
- Mince your garlic clove and mix everything together in a glass jar. Store in the fridge and shake before use.
Vegan Greek Salad with Tofu Feta Recipe
Cooking time 15 min
Serves 2
Ingredients
- 3 (ripe) tomatoes
- 1/2 cucumber
- 1 green pepper
- 1/2 – 1 red onion
- Kalamata olives
- 1 block of pre-marinated tofu (see recipe above)
Instructions
- Cut everything into bite-sized pieces. No need to be fancy – the more rustic, the better! Assemble your salad into a deep plate and drizzle with some Greek salad dressing (recipe below). Add a pinch of sea salt, freshly ground pepper, and dried oregano. Enjoy as is or serve with homemade tzatziki and pita bread. Enjoy 😋 καλή όρεξη!
