Quickly Pickled Cucumbers
Here’s a recipe for super easy quickly pickled cucumbers (aka mummonkurkut in Finnish) 🥰🥒 Mummonkurkut are a stable side dish in many Finnish households – especially in the summertime when these make the perfect refreshing side dish for any barbeque or picnic! 🌻💛
Ingredients
- 1 cucumber
- 1 dl water
- 1 dl apple cider vinegar
- 1-2 tablespoons of mustard seeds
- 1 teaspoon honey
- Pinch of salt
- Bunch of fresh dill or 2 teaspoons dried dill (fresh is best but if you’re making these at 11 pm and don’t have fresh one at and, dried dill will do juuust fine 😎)
Instructions
- Combine water, vinegar, honey, salt, and mustard seeds and boil until the honey dissolves. Set aside to cool. Once cool, add the dill.
- Slice the cucumbers into thin slices (you can also use a mandolin or cheese grater, I prefer thicker slices so mine are a bit chunkier). Add the cucumber slices into a small glass jar and pour the pickle water. Give it a shake and set it in the fridge for a couple of hours – overnight.
- This recipe makes 2 small glass jars like those seen in the picture ✨ These taste the best if eaten within a couple of days!
