Whipped Berry Porridge
Whipped Berry Porridge (Vispipuuro) is a typical Finnish porridge, that can be enjoyed as a breakfast, snack, or healthy dessert! I’m sure most Finnish people have memories of eating it as a child. I would always eagerly wait to eat my grandma’s porridge and she used to make this almost every time we visited her house when we were kids. I love the combination of tangy berries, creamy oat milk, and a hint of sweetness.
This pink porridge is traditionally made with lingonberries, and it has a light, whipped consistency. Since we’re going for a gluten-free version, I’ve substituted the semolina with quinoa. The consistency is not as airy and light as the one made with semolina, but the flavor is super good and reminds me of my childhood every time I eat this đ„°
This recipe is gluten-free, dairy-free, and super easy to make! It’s also vegan when you use a vegan-friendly sweetener like agave.
What you need for the Whipped Berry Porridge
Quinoa – You want to use white quinoa for this recipe. It gives a smooth, creamy, and porridge-like consistency compared to red, black, or tricolor quinoa.
Berries – Traditionally this porridge is made with lingonberries, but you can use whatever berries you have in your freezer (preferably berries that are more on the sour side). I used a mix of lingonberries, redcurrants, blackcurrants, and whitecurrants.
Banana – Banana adds a nice natural sweetness to this recipe. This is a perfect way to use your overripe bananas that have been lying around your kitchen! If you don’t have any bananas, you can substitute it with apple sauce or just use more honey.
Honey – I like to add a little bit of extra sweetness with a drizzle of honey. You can also use agave syrup to make this recipe vegan.
Salt – a pinch of salt just makes everything taste better đ§đœâđł
Liquid – I used both water and oat milk. You can also make this porridge with lingonberry juice or with your favorite plant milk!
Whipped Berry Porridge Recipe

Ingredients
- 1,5 dl white quinoa
- 1 overripe bananaÂ
- 2,5 dl or 1 cup berries like lingonberries
- 2,5 dl or 1 cup plant-based milkÂ
- Pinch of salt
- Sweetener of your choice like honey or agave, to taste
Instructions
- Wash the quinoa and cook according to package instructions. Once your quinoa is cooked, add the milk and berries. Cook over low/medium heat for about 15 minutes.Â
- Transfer the mixture into a blender, add banana and blend everything into a smooth porridge. Add a pinch of salt and more milk if you like more runnier consistency. Â
- Serve warm with a splash of milk and berries of your choice đ«¶đœ
Tips and notes
This porridge stays well in the fridge and you can eat it both cold or warm! I usually make a bigger batch that will last me for a couple of days (so if you want to meal prep, double the recipe!).
The best way of eating this is by heating it up in the microwave and serving it with cold oat milk and some fresh (or frozen) berries đ€ You can also add some desiccated coconut on top!
