Homemade Berbere Spice mix

Etiopialainen Berbere Mauste

Tää ihanan mausteinen mausteseos on kotoisin Etiopiasta ja se sopii erinomaisesti erilaisiin kasvisruokiin, marinadeihin, proteiineihin, pataruokiin, paistettuihin perunoihin, keittoihin, curryihin…melkeimpä mihin vaa! 😋 Tulinen mausteseos pitää sisällään sisältää ihanan lämmittäviä mausteita, kuten kanelia, kardemummaa, neilikkaa, chiliä ja maustepippuria. Nam!! Sairaan hyvä yleismauste.

Tästä maustesekoituksesta on olemassa useita eri versioita, mutta tässä oma mixi jonka oon todennu erittäin hyväks! Käytän tässä sekä kokonaisia että valmiiksi jauhettuja mausteita. Jauhamattomista mausteista saa niiin paljon enemmän makua irti kun niitä paahtaa vähän aikaa kuumalla pannulla ja jauhaa sen jälkeen joko morttelissa tai maustemyllyssä.

Kokonaisia kuivattuja chilejä ja kokonaisia korianterin&kuminansiemeniä kannattaa metsästää etnistä kaupoista. Jos et löydä kokonaisia mausteita mistään niin voit hyvin käyttää myös valmiiksi jauhettuja mausteita 🙂

Ainesosat

  • 3 rkl paprikajauhetta
  • 2 rkl chilihiutaleita/kokonaisia pieniä kuivattuja chilejä (esim. birds eye), voi laittaa vähemmän tai enemmän
  • 2 rkl kokonaisia kuminansiemeniä
  • 1 rkl (kokonaisia) korianterinsiemeniä
  • 1 rkl kurkumaa
  • 1 rkl kardemummaa
  • 1 trkl curry maustetta (ideaalitilanteessa korvaa tämä sarviapilalla)
  • 1 iso rkl kokonaisia maustepippureita
  • 1/2 rkl kokonaisia mustapippureita
  • 1/2 rkl kanelia
  • 1/2 rkl inkivääriä
  • 1/4 rkl neilikkaa

Valmistus

  1. Paahda mustapippuria, maustepippuria, kuminansiemeniä ja korianterinsiemeniä kuumalla pannulla muutaman minuutin ajan. Jauha mausteet (puoli) hienoksi morttelin tai maustemyllyn avulla. Yhdistä muiden mausteiden kanssa, sekoita ja säilytä huoneenlämmössä.

Oven-dried cherry tomatoes a.k.a. sweet & umami flavor bombs ❤️‍🔥🍅 

Drying the already-sweet cherry tomatoes emphasizes their sweetness and makes them taste almost candy-like. They are SO much better than your average store-bought sun-dried tomatoes, plus you get to decide how jammy or chewy you want them by adjusting the drying time.

Recipe:

- 600 g or 21 oz cherry tomatoes
- extra virgin olive oil
- thyme, oregano, or rosemary
- salt

Halve the tomatoes and place them cut-side up on a baking sheet lined with parchment paper. You can emphasize the tomatoes’ sweetness by sprinkling a tiny bit of cane sugar.

Pop the tomatoes into a 125°C or 260°F oven and dry for about 60-80 minutes, depending on your oven and the desired texture. You can open the oven door a couple of times during the cook to let out any steam.

Once the tomatoes are cooled, season with salt and transfer to a clean glass jar. Pour olive oil until they are covered and add a few sprigs of fresh thyme and oregano or rosemary.

Before the oven :) 

They bring a deep, rich umami flavor and natural sweetness to any dish from pasta to salads, pizzas, galettes, or sandwiches. One of my favorite ways to use them is in a frittata paired with Kalamata olives, thinly sliced zucchini, fresh basil, and (vegan) feta.

Drying the already-sweet cherry tomatoes emphasizes their sweetness and makes them taste almost candy-like. They are SO much better than your average store-bought sun-dried tomatoes, plus you get to decide how jammy or chewy you want them by adjusting the drying time.

Recipe:

- 600 g or 21 oz cherry tomatoes
- extra virgin olive oil
- thyme, oregano, or rosemary
- salt

Halve the tomatoes and place them cut-side up on a baking sheet lined with parchment paper. You can emphasize the tomatoes’ sweetness by sprinkling a tiny bit of cane sugar.

Pop the tomatoes into a 125°C or 260°F oven and dry for about 60-80 minutes, depending on your oven and the desired texture. You can open the oven door a couple of times during the cook to let out any steam.

Had to see the river once again during the golden hour, so pretty <3

Walked around the Ponte Pietra/Veronetta and grabbed some more gelato after dinner. What a beautiful, lively, but still compact and homey city <3

One of the most stunning apartments I’ve stayed. The people here were so welcoming, and the details (and the decor!) throughout the apartment were so thoughtful. I don’t think the location could be more perfect - we were right in the heart of Verona, just a couple of minutes from the river and Ponte Pietra. The apartment is hidden in a cute little alley, so you’re not bumping into people when you step outside the door. It was also perfectly quiet and calm during the night.

Walked around the Ponte Pietra/Veronetta and grabbed some more gelato after dinner. What a beautiful, lively, but still compact and homey city <3

One of the most stunning apartments I’ve stayed. The people here were so welcoming, and the details (and the decor!) throughout the apartment were so thoughtful. I don’t think the location could be more perfect - we were right in the heart of Verona, just a couple of minutes from the river and Ponte Pietra. The apartment is hidden in a cute little alley, so you’re not bumping into people when you step outside the door. It was also perfectly quiet and calm during the night.
